Western Beans & Rice

Adapted from Success Rice For A Healthy Lifestyle

  • 1 cup long-grain white rice, uncooked
  • 1 cup onions, chopped
  • 1 cups celery, sliced
  • 1 tsp garlic, minced
  • 15 ozs canned pinto beans, drained and washed
  • 8 ozs tomato sauce
  • 1/2 cup water
  • 1 tbsp ketchup
  • 1 tsp chili powder
  • 1/4 tsp hot pepper sauce
Prepare rice according to package directions. In a skillet over medium heat, cook onions, celery, and garlic until crisp-tender. Add pinto beans, tomato sauce, water, ketchup, chili powder, and hot pepper sauce. Heat thoroughly, stirring occasionally. Serve over hot rice.
