Chicken Bean & Rice Skillet

Adapted from Better Homes & Gardens, One Dish Meals

  • 1 lb ground chicken breast
  • 1/2 cup onions, chopped
  • 1/2 cup bell peppers, chopped
  • 1/2 cup celery, sliced
  • 14 1/2 ozs canned crushed tomatoes
  • 15 ozs canned dark red kidney beans, undrained
  • 8 ozs no-salt-added tomato sauce
  • 1/4 cup water
  • 2 tsps chili powder
  • 1 cup long-grain white rice
  • 1/4 tsp salt
  • 4 ozs Monterey Jack cheese, shredded
In a large skillet, cook chicken, onions, bell peppers, and celery until chicken is no longer pink. Stir in crushed tomatoes, kidney beans, tomato sauce, water, chili powder, and salt. Bring to a boil. Stir in rice. Cover and reduce heat. Simmer, stirring occasionally, ten minutes or until rice is done. Sprinkle cheese on top.
