White Chip Spice Cake

Adapted from Libby's Home Baked Goodness

  • 15 1/4 ozs spice cake mix
  • 15 ozs canned pumpkin
  • 1 tsp pumpkin pie spice
  • 3 whole eggs
  • 1/3 cup fat-free evaporated milk
  • 3 tbsps olive oil
  • 1/2 cup white chocolate chips
  • Topping:
  • 1/2 cup fat-free evaporated milk
  • 1/2 tsp pumpkin pie spice
  • 1/2 cup white chocolate chips, melted
White Chip Spice Cake
Preheat the oven to 350. Prepare a 9" x 13" pan with cooking spray; set aside. In a mixing bowl, combine cake mix, one teaspoon pumpkin pie spice, pumpkin, eggs, 1/3 cup evaporated milk, oil, and half cup chocolate chips. Mix until well blended. Pour into prepared pan. Bake for 25 minutes or until a toothpick inserted in the center comes out clean. Cool. Meanwhile, in a saucepan, heat the remaining evaporated milk and add the remaining pumpkin pie spice. Heat just to a boil then add remaining chocolate chips, stirring until melted and smooth. Spread over cooled cake.
