Turkey Barbecue On Buns

Adapted from The Butterball Turkey Cookbook

  • 1/2 tsp olive oil
  • 1/2 cup celery, sliced
  • 1/2 cup onions, chopped
  • 1/2 cup bell peppers, chopped
  • 8 ozs turkey light meat, skinless, cooked and cubed
  • 1 cup no-salt-added ketchup
  • 3 tbsps white vinegar
  • 2 tbsps light brown sugar, packed
  • 1 tsp salt
  • 1/2 tsp ground mustard
  • 8 whole wheat hamburger buns
In a skillet, heat oil over medium heat. Add celery, onions, and bell peppers. Cook until lightly browned. Add turkey, ketchup, vinegar, brown sugar, salt, and mustard. Reduce heat to low and simmer 15 minutes. Spoon turkey barbecue on the bottom halves of the buns. Cover with top halves and serve. Serve with green beans and potato salad.
