Taco Corn Chili

Adapted from

  • 1 lb ground chicken breast skinless
  • 1/2 cup onions, chopped
  • 1 1/4 ozs taco seasoning mix
  • 15 ozs canned dark red kidney beans, rinsed and drained
  • 10 ozs canned diced tomatoes with green chilies, undrained
  • 10 ozs frozen corn, thawed
  • 2 cups water
  • 2 tsps granulated sugar
Taco Corn Chili
In a large saucepan cook chicken and onions until chicken is no longer pink. Add taco seasoning mix, kidney beans, tomatoes, corn, water, and sugar. Mix well. Bring mixture to a boil. Reduce heat and simmer for 20 minutes.
