Slow Cooker Beef Vegetable Chili

Adapted from

  • 1 lb top round beef, cooked and cut into pieces
  • 1 cup onions, chopped
  • 16 ozs frozen mixed vegetables, thawed
  • 29 ozs canned diced tomatoes with green chilies, undrained
  • 30 ozs canned dark red kidney beans, rinsed and drained
  • 1 1/4 ozs chili seasoning mix
  • 1 1/2 tsps salt
  • 2 cups water
Slow Cooker Beef Vegetable Chili
In a large skillet cook onions until tender. In a 5 1/2 quart slow cooker, combine beef pieces, onions, vegetables, tomatoes, kidney beans, chili seasoning, salt, and water. Mix well. Cover and cook on low for seven hours, or until vegetables are cooked.
