Fig Oatmeal Bars

Adapted from Treasury of Christmas Cookies

  • Crust:
  • 1 1/4 cups unbleached flour
  • 1 cup quick cooking oats
  • 1/2 cup granulated sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup margarine, melted
  • 1 tsp pure vanilla extract
  • 10 ozs fig filling
Fig Oatmeal Bars
Preheat oven to 350. Prepare a 9" square dish with cooking spray; set aside. To prepare crust, combine flour, oats, sugar, baking soda, and salt. Mix well. Add margarine and vanilla extract until crumbly; set aside one cup for topping. Press remaining crumb mixture onto bottom of prepared dish. Spread fig filling evenly over top. For easier spreading, place filling into microwave for a few seconds until warmed. Bake for 30 minutes, or until edges are browned.
