Chicken Barley Chili

Adapted from

  • 14 1/2 ozs canned diced tomatoes, undrained
  • 16 ozs salsa
  • 14 1/2 ozs chicken broth
  • 1 cup barley
  • 4 cups water
  • 2 tbsps chili powder
  • 15 ozs canned dark red kidney beans, drained
  • 10 ozs frozen corn, thawed
  • 1 lb chicken breast cubes, cooked
In a large saucepan, combine tomatoes, salsa, chicken broth, barley, water, and chili powder. Over high heat, bring to a boil. Cover and reduce heat to low. Simmer 40 minutes, stirring occasionally. Add beans, corn, and chicken cubes. Mix well. Increase heat to high until chili comes to a boil. Cover and reduce heat to low again. Simmer another five minutes, or until barley is tender.
