Cheesy Turkey Stuffed Shells

Adapted from Better Homes & Gardens, Step By Step Microwave Cook Book

  • 2 ozs frozen peas, thawed
  • 1/2 cup onions, chopped
  • 4 tsp cornstarch
  • 2 tsp yellow mustard
  • 1 1/2 cups chicken broth
  • 1/2 tsp salt
  • 4 ozs cheddar cheese, shredded
  • 8 ozs turkey light meat, skinless, cooked and shredded
  • 14 pcs manicotti pasta, cooked
Cheesy Turkey Stuffed Shells
In a 4-cup liquid glass measure, combine peas and onions. Microwave,uncovered, on medium-high for three minutes, or until onions are soft. Stir in cornstarch, mustard, broth, and salt. Microwave, uncovered, on high for three minutes more, or until bubbly, stirring after one minute. Add cheese. Stir in until melted. Stir in half cup sauce into turkey. Fill cooked pasta with one tablespoon turkey-cheese mixture. In a 2-quart glass dish, arrange filled pasta, seam-side up. Pour remaining cheese sauce over filled pasta shells in dish. Cover and microwave on high for three minutes, or until heated through.
