Cheesy Turkey and Broccoli Casserole

  • 16 ozs turkey light meat, skinless
  • 4 tbsps margarine
  • 2 tbsps unbleached flour
  • 2 cups fat-free milk
  • 1 tbsp ground mustard
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 8 ozs cheddar cheese, shredded
  • 4 ozs fat-free cream cheese, softened
  • 2 cups long-grain rice, cooked
  • 16 ozs frozen broccoli flowerets, thawed
  • 1 cup bread crumbs
Cheesy Turkey and Broccoli Casserole
Preheat oven to 400. Prepare a 9"x13" pan with cooking spray; set aside. In a medium saucepan, melt margarine. Add flour and cook for one minute. Stir in milk, dry mustard, salt, and black pepper. Bring mixture to a boil. Remove from heat and stir in cheese and cream cheese until melted; set aside. In a mixing bowl, combine rice, broccoli flowerets, turkey, and cheese sauce. Spread turkey mixture into prepared pan. Top with bread crumbs. Bake for 20 minutes or browned on top.
