Broccoli & Cheese Omelet

Adapted from

  • 4 whole eggs, slightly beaten
  • 4 tbsps fat-free milk
  • 3 ozs frozen chopped broccoli, thawed and cooked
  • 2 ozs frozen hash browns, thawed and cooked
  • 3 tbsps cheddar cheese, shredded
  • 1 tsp salt
  • 1/8 tsp black pepper
Broccoli & Cheese Omelet
Spray an 8" skillet with cooking spray. Heat over medium-high heat until hot. Add egg mixture. This should set immediately at edges. Push cooked portions from edges toward the center with spatula so that uncooked eggs can reach the hot pan surface. As needed, continue this step until eggs are cooked. When no visible egg liquid remains, place chopped broccoli, hash browns, cheese, salt, and black pepper on one side of omelet. Fold omelet in half with spatula. Cook for a few more minutes, or until cheese has melted.
