Banana Chocolate Chip Coffee Cake

  • Cake:
  • 2 1/4 cups low-fat baking mix
  • 1 cup bananas, mashed, 2 bananas
  • 3 ozs mini chocolate chips
  • 1/4 cup granulated sugar
  • 1/3 cup fat-free milk
  • 1 tbsp olive oil
  • 1 tsp cinnamon
  • 1 whole egg
  • Glaze:
  • 1 cup powdered sugar
  • 1 tbsp fat-free milk
  • 1 tsp pure vanilla extract
Banana Chocolate Chip Coffee Cake
Preheat oven to 375. Prepare a 8" square pan with cooking spray; set aside. In a mixing bowl, combine baking mix, bananas, chocolate chips, granulated sugar, 1/3 cup milk, oil, and cinnamon. Mix until all is moistened. Spread batter into prepared pan. Bake for 25 minutes, or until toothpick inserted in center comes out clean. Cool. Meanwhile, to prepare glaze, combine powdered sugar, remaining milk, and vanilla extract. Mix until drizzling consistency. Pour evenly over cooked cake.
