Lower Fat Snickerdoodles

Adapted from
40 servings

2 3/4 c  unbleached flour, softened  1  whole  egg 
1 1/2 c  granulated sugar  1/4 c  egg whites 
2  tsps  cream of tartar  2  tbsps  low-fat buttermilk 
1  tsp  baking soda  1  tsp  pure vanilla extract 
1/2 tsp  salt  2  tbsps  granulated sugar 
1/2 c  margarine, softened  1  tbsp  cinnamon 
In a mixing bowl, combine flour, sugar, cream of tartar, baking soda, and salt. Mix well. Add margarine, egg, egg whites, buttermilk, and vanilla extract. Mix until all is moistened. Cover and chill for several hours, or until dough is firm. Preheat oven to 400. Prepare a baking sheet with cooking spray. In a small bowl, combine remaining sugar and cinnamon. Make dough into 1" balls and roll balls into sugar-cinnamon mixture. Place onto prepared baking sheet. Bake for ten minutes.
