Bran Flakes Banana Bread

Adapted from
16 servings

2 c unbleached flour  1 1/2 c bananas, mashed 
3/4 c granulated sugar  2 1/2 c bran flakes cereal 
1 tsp baking powder  1/4 c light margarine, softened 
1/2 tsp baking soda  2 whole eggs 
1/8 tsp salt  1/4 c pecans, chopped 
Preheat oven to 350. Prepare a 9"x5" loaf pan with cooking spray; set aside. In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. In a small bowl, combine cereal and bananas. Add to dry ingredients. Stir in margarine, eggs, and pecans. Mix well. Spread batter into prepared pan. Bake for one hour, or until toothpick inserted in center comes out clean.
