Zucchini Carrot Cake Mix Muffins

Adapted from Quick Cooking Annual Recipes

  • 15 1/4 ozs carrot cake mix
  • 1/2 cup sweetened applesauce
  • 1/2 cup water
  • 2 tbsps olive oil
  • 1 1/2 zucchini, shredded
  • 1 cup fresh carrots, shredded
  • 1/4 cup walnuts, chopped
Zucchini Carrot Cake Mix Muffins
Preheat oven to 350. Prepare 16 standard muffin cups with cooking spray; set aside. In a mixing bowl, combine cake mix, applesauce, water, oil, and walnuts. Mix until all is moistened. Fill prepared muffin cups with three-fourths full of batter each. Bake for 25 minutes, or until toothpick inserted in center comes out clean.
