Whole Wheat Banana Bread

Adapted from General Mills, Inc.

  • 2 cups whole wheat flour
  • 1 cup unbleached flour
  • 2 cups granulated sugar
  • 2 cups bananas, mashed, 3 bananas
  • 4 whole eggs
  • 1/4 c walnuts, chopped
  • 4 tbsps olive oil
  • 2 tsps cinnamon
  • 2 tsps baking soda
  • 1 tsp salt
  • 1/2 tsp baking powder
Whole Wheat Banana Bread
Preheat oven to 350. Prepare two 9"x5" loaf pans with cooking spray; set aside. In a mixing bowl, combine flours, sugar, bananas, eggs, walnuts, oil, cinnamon, baking soda, salt, and baking powder. Mix until all is moistened. Pour batter evenly between prepared pans. Bake for one hour or until toothpick inserted in center comes out clean.
