Turkey Pesto & Pasta

Adapted from Fresh Ideas for Vegetables

  • 16 ozs frozen peas, thawed
  • 1 c onions, chopped
  • 12 ozs turkey light meat, skinless, cooked and cubed
  • 1/2 c light mayonnaise
  • 4 tbsps prepared pesto
  • 1/4 c parmesan cheese
  • 1/2 tsp salt
  • 8 ozs wagon wheel pasta, cooked and drained
Cook frozen peas according to package directions; add onions. Drain when peas have cooked. In a large saucepan, combine peas mixture, turkey, mayonnaise, pesto, parmesan cheese, and salt. Mix well and heat through. Add pasta. Cool and then refrigerate until ready to serve.
