Sugar Cookies

Adapted from Pillsbury, The Complete Book of Baking

  • Dough:
  • 1 cup margarine, softened
  • 1 cup granulated sugar
  • 3 tbsps fat-free milk
  • 1 tsp pure vanilla extract
  • 1 whole egg
  • 3 cups unbleached flour
  • 1 1/2 tsps baking powder
  • 1/4 tsp salt
  • Icing:
  • 16 ozs powdered sugar
  • 3 tbsps meringue powder
  • 6 tsps warm water
Sugar Cookies
To prepare the dough, combine margarine, granulated sugar, milk, vanilla extract, egg, flour, baking powder, and salt in a mixing bowl. Mix well. Cover and refrigerate for one hour, or until easy to handle. Preheat oven to 400. On a lightly, floured surface, roll dough to 1/8" thickness. Using 2 1/2" cutters, cut dough into desired shapes. Place one inch apart onto unprepared baking sheets. Bake for 7 minutes or until lightly browned. To prepare frosting, combine powdered sugar, meringue powder, and water in a mixing bowl. Mix until peaks form, or for ten minutes. For a thinner frosting, add a little water, a drop at a time, until the consistency of honey. Keep frosting covered in the refrigerator for up to a week. Decorate as desired.
