Spiced Pumpkin Cake

Adapted from The Olives Dessert Table

  • 3 tbsps unsalted butter, softened
  • 3/4 c light brown sugar
  • 1 whole egg
  • 2/3 c canned pumpkin
  • 1/2 c apple cider
  • 1 c unbleached flour
  • 2 tsps ground cinnamon
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cloves
  • 1/2 tsp nutmeg
Preheat the oven to 350. Prepare a 9" square cake pan with cooking spray and flour; set aside. In a mixing bowl, combine butter, sugar, egg, pumpkin, and cider. Mix well. Fold in flour, cinnamon, baking powder, baking soda, salt, cloves, and nutmeg. Mix until moistened. Spread batter into prepared pan. Bake for 25 minutes. Cool in the pan.
