Ranch Turkey Casserole

Adapted from Hot Recipes in Cool Dishes

  • 16 ozs rotini pasta, drained
  • 8 ozs fat-free cream cheese, softened
  • 2 1/2 cup fat-free milk
  • 3 tbsps margarine
  • 1 oz ranch salad dressing mix, dry
  • 1 tsp salt
  • 16 ozs turkey light meat, skinless, cooked and cubed
  • 3 ozs frozen sliced carrots, thawed
  • 3 ozs frozen corn, thawed
  • 10 ozs frozen broccoli flowerets, thawed
  • 2 ozs whole wheat crackers, crushed
Prepare a 9"x13" pan with cooking spray. Place cooked pasta onto bottom; set aside. Preheat oven to 375. In a large sauce pan, combine cream cheese, milk, margarine, dressing mix, and salt. Mix well and bring to a boil. Cook until cream cheese is smooth. Pour sauce evenly over pasta in pan. Stir in turkey, carrots, corn, and broccoli. Mix until all is well coated. Sprinkle cracker crumbs evenly over top. Bake for 20 minutes, or until bubbly hot.
