Pumpkin Pie Bubble Up Breakfast Bake

  • 8 ozs fat-free cream cheese, softened
  • 10 ozs canned pumpkin
  • 1/2 cup powdered sugar
  • 2 tsps pumpkin pie spice
  • 12 3/8 ozs reduced fat refrigerated cinnamon rolls, with icing
Pumpkin Pie Bubble Up Breakfast Bake
Preheat oven to 350. Prepare a 11" x 7" casserole dish with cooking spray; set aside. In a large glass bowl, add cream cheese. Microwave on 70% power for one minute, or until soft. Stir in pumpkin, powdered sugar, and pumpkin pie spice. Mix well. Separate dough into separate rolls; set icing aside. Cut each cinnamon roll into four pieces; gently stir into pumpkin mixture. Spread mixture evenly into prepared casserole dish. Bake for 25 minutes or until browned on top. Pour icing evenly over top, spreading evenly across casserole.
