Peppermint Sugar Cookie Bark

Adapted from General Mills, Inc.

  • 1 cup granulated sugar
  • 1 cup margarine, softened
  • 3 tbsp fat-free milk
  • 1 tsp pure vanilla extract
  • 1 whole egg
  • 3 cup unbleached flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • Toppings:
  • 12 ozs white chocolate chips
  • 2 ozs peppermint candies, crushed fine
Peppermint Sugar Cookie Bark
Preheat oven to 400. Prepare a jelly roll pan with cooking spray; set aside. To prepare dough, combine sugar, margarine, milk, vanilla extract, egg, flour, baking powder, and salt in a mixing bowl. Mix well. Press evenly into prepared pan. Bake for 15 minutes, or until lightly browned on top. Meanwhile, in a saucepan over low heat, melt chocolate chips until smooth. Spread evenly over baked layer. Immediately, sprinkle peppermint candy over top. Chill for two hours, or until chocolate is set.
