Peppermint Biscotti
In a mixing bowl, combine margarine and sugar. Mix well. Add eggs and peppermint extract; set aside. In a smaller bowl, combine flour, baking powder, salt, and peppermint candies. Gradually add to margarine mixture. Divide dough in half and chill two hours. Preheat oven to 350. On an unprepared baking sheet, shape each dough into a 12" x 2-1/2" rectangle. Bake 25 minutes or until light brown. Remove to wire racks and cool for ten minutes. Transfer to a cutting board; cut diagonally with a sharp knife into half inch slices. Place cut side down on unprepared baking sheets. Bake for 14 minutes or until firm. Remove to wire racks again to cool completely. In a glass bowl, melt chocolate chips until are smooth. Dunk each piece of biscuit into melted chocolate and then sprinkle each with remaining peppermint candies. Place on waxed paper and chill until chocolate is firm.
