Pasta and Spinach

Adapted from Mr. Food Cooks Pasta

  • 13 1/4 ozs whole wheat medium shells, cooked and drained
  • 2/3 cup parmesan cheese
  • 20 ozs frozen spinach, thawed and drained
  • 15 ozs fat-free cottage cheese
  • 1/2 cup egg whites, beaten
  • 1 tbsp parsley
  • 2 tsps salt
  • 1/2 tsp black pepper
  • 24 ozs low-fat spaghetti sauce
  • 2 tbsps parmesan cheese
Pasta and Spinach
Preheat oven to 375. Prepare a 9"x13" pan with cooking spray; set aside. In a mixing bowl, combine cooked pasta, 2/3 cup parmesan cheese, spinach, cottage cheese, egg whites, parsley, salt, black pepper, and spaghetti sauce. Mix until all is combined. Spread mixture evenly into prepared pan. Sprinkle with remaining parmesan cheese. Bake for 25 minutes, or until lightly browned.
