Oatmeal Nut Quick Bread

Adapted from Great Baking With the Convenience of Mixes

  • 1/2 c rolled oats
  • 1 c water, boiling
  • 15 3/8 ozs nut bread mix
  • 1/2 c raisins
  • 1/4 c light brown sugar, packed
  • 1 whole egg
Preheat oven to 350. Prepare a 9"x 5" loaf pan with cooking spray and flour; set aside. In a mixing bowl, combine oats and water until moistened. Add bread mix, foil packet contents, raisins, brown sugar, and egg. Mix well. Pour batter into prepared pan. Bake 40 minutes, or until toohpick inserted in center comes out clean.
