Meatball Kraut Dish

Adapted from Better Homes & Gardens, Ground Meat Cookbook

  • 1/4 cup egg whites, slightly beaten
  • 1/4 cup fat-free milk
  • 3 cups bread crumbs
  • 1/2 tsp black pepper
  • 1 lb ground chicken breast
  • 1/2 tbsp olive oil
  • 30 ozs canned sauerkraut, drained
  • 1/2 cup onions, chopped
  • 3/4 cup long-grain rice, uncooked
  • 1 1/2 cups water
  • 14 1/2 ozs canned diced tomatoes, pureed
In a mixing bowl, combine egg whites, milk, bread crumbs, and black pepper. Add chicken and mix well. Shape into 12 meatballs. In a large saucepan, heat oil over medium heat. Add meatballs and cook until no pink remains in chicken. Remove meatballs from pan. In same saucepan, combine sauerkraut and onions. Stir in rice and water. Add meatballs and pureed tomatoes. Bring to a boil. Reduce heat and simmer, covered for 30 minutes or until rice is done.
