Fusilli with Summer Tomato Sauce

Adapted from Quick From Scratch Pasta

  • 4 whole fresh tomatoes, chopped
  • 1 tsp garlic, minced
  • 3 tbsps olive oil
  • 2 1/4 tsps salt
  • 1/4 tsp black pepper
  • 4 tsps basil
  • 1 lb fusilli pasta, cooked and drained
  • 1/4 c parmesan cheese
Fusilli with Summer Tomato Sauce
In a food processor, process tomatoes, garlic, oil, salt, black pepper, and basil together until smooth. Add mixture to pasta. Fold in parmesan cheese. Let sit for one minute to allow pasta to absorb some of the liquid.
