Creamy Chicken Casserole

Adapted from The Kraft Cookbook

  • 6 1/2 ozs chicken breast strips, cooked and cubed
  • 1 1/2 c long-grain white rice, cooked
  • 3 whole hard-boiled eggs, chopped
  • 1/2 c onions, chopped
  • 10 3/4 ozs low-fat cream of mushroom soup
  • 3/4 c light mayonnaise
  • 1 c crispy rice cereal
Preheat oven to 375. Prepare a 2-quart casserole dish with cooking spray; set aside. In a mixing bowl, combine chicken, cooked rice, eggs, and onions. Mix well. Fold in soup and mayonnaise. Mix well. Spread mixture evenly into prepared dish. Sprinkle cereal over top. Bake for 45 minutes.
