Chicken Parmesan with Penne Pasta

  • 1 whole egg
  • 1/3 cup bread crumbs
  • 1/3 cup parmesan cheese
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 lbs chicken breast halves skinless
  • 26 oz low-fat spaghetti sauce
  • 1/2 cup Italian cheese blend, shredded
  • 8 ozs penne pasta, cooked
Chicken Parmesan with Penne Pasta
Prepare a 3 1/2 - quart slow cooker with cooking spray; set aside. In small bowl, combine egg until foamy. In another bowl, combine bread crumbs, parmesan cheese, Italian seasoning, salt, and pepper. Mix well. Dip each piece of chicken into egg, then coat evenly with bread crumb mixture; place in slow cooker. Spread spaghetti sauce evenly over chicken. Cover and cookon low setting for five hours, or until chicken is cooked through. Sprinkle Italian cheese blend over top. Cover and cook on low heat setting ten minutes longer or until cheese melts. Serve chicken with cooked penne pasta.
