Cheesy Tater Topper

Adapted from Better Homes & Gardens, New Dieter

  • 1 cup fat-free milk
  • 1 tbsp cornstarch
  • 1/2 tsp ground mustard
  • 1 tsp salt
  • 1/8 tsp black pepper
  • 3 ozs mozzarella cheese, shredded
  • 10 ozs frozen mixed vegetables, thawed
  • 4 med baking potatoes
  • baked and cut into quarters
In a small saucepan, combine milk, cornstarch, mustard, salt, and black pepper. Cook and stir until thickened and bubbly. Add cheese, stirring until melted. Stir in vegetables and heat through. Serve warm over baked pototoes.
