Broccoli Fettuccine Alfredo

Adapted from 2000 Quick Cooking Annual Recipes

  • 4 tbsps margarine, melted
  • 2 tbsps unbleached flour
  • 1 1/3 cups fat-free milk
  • 1/2 tsp salt
  • 1 cup parmesan cheese, grated
  • 16 ozs frozen chopped broccoli, thawed and cooked
  • 16 ozs fettuccine, cooked and drained
Broccoli Fettuccine Alfredo
In a large saucepan, melt margarine. Stir in flour, milk, and salt. Bring mixture to a boil and whisk for five minutes, or until thickened. Remove from heat. Add parmesan cheese and broccoli. Mix well. Serve over cooked fettuccine.
