Blueberry Cake

Adapted from Dr. Cookie Cookbook

  • 2 c unbleached flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 whole eggs, slightly beaten
  • 1/2 cup granulated sugar
  • 3 tbsps olive oil
  • 1 tsp orange peel, grated
  • 1/2 cup refrigerated orange juice
  • 1/3 cup honey
  • 1 tsp pure vanilla extract
  • 12 ozs fresh blueberries
  • Glaze:
  • 1/4 cup powdered sugar
  • 2 tsps water
Blueberry Cake
Preheat oven to 350. Prepare a 9'x13" pan with cooking spray; set aside. In a mixing bowl, combine flour, baking soda, and salt. Add eggs, granulated sugar, oil, orange peel, half cup orange juice, honey, and vanilla extract. Mix until all is moistened. Fold in blueberries. Pour batter evenly into prepared pan. Bake for 40 minutes, or until toothpick inserted in center comes out clean. Cool. Meanwhile to prepare glaze, combine powdered sugar and water. Mix until smooth. Drizzle glaze evenly over top of cake.
