Banana Muffins

Adapted from Weight Watchers Homestyle Recipes

  • 2 1/2 cups unbleached flour
  • 1 cup light brown sugar, packed
  • 3 tsps baking powder
  • 1 tbsp cinnamon
  • 1 cup bananas, mashed, 2 bananas
  • 1/2 cup fat-free milk
  • 8 ozs light sour cream
  • 2 whole eggs
  • 1 tsp pure vanilla extract
Banana Muffins
Preheat the oven to 350. Prepare 18 standard muffin cups with cooking spray and flour; set aside. In a mixing bowl, combine flour, sugar, baking powder, and cinnamon. In another mixing bowl, combine bananas, milk, sour cream, eggs, and vanilla extract. Mix dry ingredients with wet ingredients just until moistened. Fill each muffin cup 3/4 full. Bake for 25 minutes, or until a toothpick inserted in the center comes out clean.
