Apple Streusel Nut Loaves

Adapted from Holiday Classics II

  • 30 ozs nut bread mix
  • 2 cups fat-free milk
  • 2 med Granny Smith apples, chopped fine
  • 4 tsps cinnamon
  • 2 whole eggs
  • Topping:
  • 1/2 cups light brown sugar, packed
  • 2 tbsps unbleached flour
  • 1 tsp water
  • 1 tsp cinnamon
  • 1 tsp apple pie spice
Preheat oven to 350. Prepare a 22 miniature loaf pans with cooking spray and flour; set aside. In a mixing bowl, combine bread mixes, foil packets from mixes, milk, chopped apples, four teaspoons cinnamon, and eggs. Mix well. Pour about half cup or three ounces of batter into each prepared pan; set aside. Meanwhile, to prepare topping, combine brown sugar, flour, water, remaining cinnamon, and apple pie spice. Mix well. Sprinkle evenly over top loaves. Bake for 30 minutes, or until toothpick comes out clean.
