Winter Harvest Stuffing

Adapted from California Raisin Marketing Board

  • 1 1/2 c raisins
  • 1/2 c water, hot
  • 1 c celery, sliced
  • 1 c onions, chopped
  • 2 c Granny Smith apples, diced
  • 1/4 c walnuts, chopped
  • 6 c whole wheat bread slices, cubed and toasted
  • 1/2 tsp allspice
  • 1/8 tsp black pepper
Winter Harvest Stuffing
Preheat oven to 350. Prepare a 2-quart casserole dish with cooking spray; set aside. In a small bowl, combine raisins and water; set aside. In a large saucepan, cook celery and onions until tender. Stir in apples and walnuts. Cook five minutes. Add raisin mixture, bread cubes, allspice, and black pepper. Cook and stir for five minutes, or until bread is evenly moistened and heated through. Place mixture into prepared dish. Bake for 20 minutes.
