Whole Wheat Fig Muffins

Adapted from Valley Fig Growers

  • 1 cup whole wheat flour
  • 1/2 cup unbleached flour
  • 1/2 cup wheat germ
  • 2 tsps baking powder
  • 1 tsp salt
  • 1/4 cup olive oil
  • 1/2 cup honey
  • 1 whole egg
  • 1/2 cup fat-free milk
  • 6 ozs dried figs, chopped
Whole Wheat Fig Muffins
Preheat oven to 375. Prepare 12 standard muffin pans with cooking spray; set aside. In a mixing bowl, combine flours, wheat germ, baking powder, and salt. Mix well. In another mixing bowl, combine oil, honey, egg, milk, and figs. Mix well. Add to dry ingredients. Mix until all is moistened. Pour batter evenly into prepared pans. Bake for 20 minutes, or until toothpick inserted in center comes out clean.
