Valentine Cheesecake

Adapted from The Family Circle Encyclopedia of Cooking

  • Crust:
  • 2 1/2 cups low-fat graham cracker crumbs
  • 7 tbsps margarine, softened
  • 3 tbsps granulated sugar
  • Filling:
  • 32 ozs fat-free cream cheese, softened
  • 1 tsp pure vanilla extract
  • 1 1/2 cups granulated sugar
  • 4 whole eggs, slightly beaten
  • Topping:
  • 21 ozs cherry pie filling
Valentine Cheesecake
Prepare a heart-shaped pan and a 6" round pan with cooking spray; set aside. To prepare crust, combine crumbs, margarine, and three tablespoons sugar in a mixing bowl. Mix until crumbly. Press into bottoms of prepared pans. Preheat oven to 350. Bake crusts for ten minutes. Meanwhile, to prepare filling, combine cream cheese, remaining sugar, vanilla extract, and eggs. Mix well. Pour mixture between baking pans. Bake for one hour or until centers are set. When cool run a small knife around edges of cakes. Carefully invert pans and remove cakes from pans. Spread pie filling over tops. Chill for several hours.
