Turkey Tamale Pie

Adapted from General Mills, Inc.

  • 8 ozs turkey light meat, skinless, cooked and cubed
  • 4 1/2 ozs canned green chiles, drained and chopped
  • 1 1/4 ozs low-sodium taco seasoning mix
  • 4 ozs cheddar cheese, shredded
  • 1/2 c low-fat baking mix
  • 1/2 c cornmeal
  • 3/4 c fat-free milk
  • 1 whole egg
  • 11 ozs Mexicorn, drained
Turkey Tamale Pie
Preheat oven to 400. Prepare a 9" glass dish with cooking spray; set aside. In a small bowl, combine turkey, chiles, and taco seasoning mix. Place in prepared dish. Sprinkle cheese on top; set aside. In a mixing bowl, combine baking mix, cornmeal, milk, egg, and canned corn until combined. Pour over turkey mixture in dish. Bake for 30 minutes, or until toothpick inserted in center comes out clean.
