Turkey Rice Soup

Adapted from Pace Picante Sauce 40th Anniversary Recipe Collection

  • 28 ozs canned whole tomatoes, undrained
  • 1/2 cup onions, chopped
  • 4 cups turkey light meat, skinless, cooked and cubed
  • 29 ozs chicken broth
  • 2 cups long-grain white rice, cooked
  • 10 ozs frozen corn, thawed
  • 3/4 cup picante sauce
  • 3/4 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
In a food processor, combine tomatoes and onions. Process until smooth. Pour mixture into a saucepan. Add turkey, broth, rice, corn, picante sauce, cumin, chili powder, and salt. Mix well. Bring to a boil; reduce heat and simmer ten minutes.
