Turkey Rice Pumpkin Soup

Adapted from Great American Brand Name Recipes Cookbook

  • 1/2 c onions, chopped
  • 1/2 c celery, sliced
  • 4 c chicken broth
  • 15 ozs canned pumpkin
  • 8 ozs turkey light meat, skinless, cooked and cubed
  • 2 c long-grain white rice, cooked
  • 1 c fat-free milk
In a kettle, cook onions and celery until tender. Add broth and pumpkin. Bring to a boil and then reduce heat and simmer five minutes. Stir in turkey, rice, and milk. Simmer until heated through.
