Turkey and Green Bean Casserole

Adapted from Best Loved Casseroles

  • 6 ozs savory herbs stuffing mix
  • 1 cup low sodium chicken broth
  • 10 3/4 ozs low-fat cream of mushroom soup
  • 5 ozs fat-free evaporated milk
  • 1/4 tsp black pepper
  • 16 ozs frozen French Style green beans, thawed and drained
  • 8 ozs turkey light meat, skinless, cooked and cut into pieces
  • 1 oz reduced fat Ritz crackers, crushed fine
Turkey and Green Bean Casserole
Preheat oven to 350. Prepare a11 x7" casserole dish with cooking spray; set aside. In a mixing bowl, combine stuffing mix and chicken broth. Mix until stuffing is moistened. Spread evenly onto bottom of prepared dish; set aside. In another mixing bowl, whisk together cream of mushroom soup, evaporated milk, and black pepper. Stir in green beans, and turkey. Mix well. Spread mixture evenly into prepared dish with stuffing. Sprinkle crushed crackers evenly over top. Bake, uncovered, for 30 minutes, or until heated through.
