Tuna Vegetable Casserole

Adapted from General Mills, Inc.

  • 5 ozs Special K cereal, crushed fine
  • 7 ozs shell pasta, cooked and drained
  • 10 3/4 ozs low-fat cream of mushroom soup
  • 12 ozs tuna in water, drained and flaked
  • 12 ozs frozen mixed vegetables, thawed
  • 1 cup fat-free milk
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 3 ozs cheddar cheese, shredded
Tuna Vegetable Casserole
Preheat oven to 400. Prepare a 9" x 13" pan with cooking spray; set aside. In a mixing bowl, combine cooked pasta, mushroom soup, tuna, and mixed vegetables. Mix well. In a liquid measure combine milk, salt, and black pepper. Pour over tuna mixture and mix until combined. Place mixture into prepared pan. Sprinkle top evenly with crushed cereal and cheese. Bake for 25 minutes, or until heated through.
