Tropical Coffee Cake

Adapted from Quick Cooking

  • 1 1/2 c unbleached flour
  • 1 c granulated sugar
  • 2 tsps baking powder
  • 1/2 tsp salt
  • 8 ozs light sour cream
  • 2 tbsps olive oil
  • 2 whole eggs
  • 8 ozs crushed pineapple, drained
  • Topping:
  • 3 tbsps granulated sugar
  • 1 tsp cinnamon
Preheat oven to 350. Prepare a 8" x 8" square dish with cooking spray; set aside. In a mixing bowl, combine flour, sugar, baking powder, and salt; set aside. In another mixing bowl, combine sour cream, oil, eggs, and pineapple. Add to dry ingredients and mix until thoroughly combined. Pour batter into prepared dish. In a small bowl, combine remaining sugar and cinnamon. Sprinkle evenly on top of batter. Bake for 35 minutes, or until toothpick inserted in center comes out clean.
