Swiss Vegetable Casserole

Adapted from Best Loved Holiday

  • 2 tbsps margarine
  • 1 cup onions, chopped
  • 2 tbsps unbleached flour
  • 1 1/4 tsps salt
  • 1/4 tsp black pepper
  • 1 1/2 cups fat-free milk
  • 8 ozs reduced fat Swiss cheese, shredded
  • 12 ozs frozen broccoli flowerets, thawed and cooked
  • 16 ozs frozen sliced carrots, thawed and cooked
  • 1/4 cup buttery crackers, crushed
Swiss Vegetable Casserole
Preheat oven to 350. Prepare 2 - quart casserole dish with cooking spray; set aside. In a large saucepan, melt margarine. Add onions and cook until heated through. Add flour, salt, and black pepper. Mix well and cook until mixture is bubbly and thickened, stirring often. Remove from heat. Stir in 3/4 cup Swiss cheese until melted. Add cooked vegetables. Spread into prepared dish. Sprinkle with remaining cheese and cracker crumbs. Bake for 30 minutes, or until browned.
