Strawberry Nut Bread

Adapted from

  • 16 ozs frozen whole strawberries, thawed and drained
  • 2 cups granulated sugar
  • 1 cup water
  • 1/4 cup olive oil
  • 4 whole eggs
  • 3 cups unbleached flour
  • 4 tsps cinnamon
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup walnuts, chopped
Strawberry Nut Bread
Preheat oven to 350. Prepare two 9"x5" loaf pans with cooking spray; set aside. In a mixing bowl, combine mashed strawberries, sugar, water, oil, and eggs. Mix well. Add flour, cinnamon, baking soda, salt, and nuts. Mix until all is moistened. Pour batter evenly between loaf pans. Bake each one hour or until toothpick inserted in center comes out clean.
