Spring Peanut Butter Cups

  • 6 ozs Baker's white chocolate baking squares
  • 6 ozs pink vanilla flavor candy wafers, or yellow
  • 1/3 cup peanut butter
  • 2 1/2 cups powdered sugar
Spring Peanut Butter Cups
Melt both types of chocolate in a saucepan over low heat until smooth. Set the saucepan in a hot water bath to maintain consistency. With a small paintbrush, brush melted chocolate onto the bottom and sides of paper candy cups until about 1/8" thick. In a small bowl, combine peanut butter and powdered sugar until smooth. Additional powdered sugar may be needed if peanut butter is still sticky. Shape mixture into balls. Put a peanut butter ball in each chocolate-coated candy cup. To seal the peanut butter balls, spoon another layer of melted chocolate over each ball. Gently tap candy cups lightly to remove air bubbles. Chill for 30 minutes or until the chocolate has hardened.
