                                bacon slices, cooked and crumbled

                                light sour cream

                                3     whole
                                eggs, separated

                                2     tbsps
                                unbleached flour

                                1     tsp
                                salt
                            
- 
                                1/8 tsp
                                black pepper

                                10     ozs
                                frozen spinach, thawed
                            
- 
                                2     ozs
                                cheddar cheese, shredded
                            
- 
                                1/2 cup
                                bread crumbs
                            
 
                    
             
            
Preheat oven to 350. Prepare a deep dish pie pan with cooking spray; set aside. In a mixing bowl, combine sour cream, egg yolks, flour, salt, and black pepper. Mix well and set aside. In another mixing bowl, beat egg whites until stiff peaks form. Fold into sour cream mixture. Spread spinach onto bottom of prepared pan. Spread sour cream mixture over spinach layer. Sprinkle top evenly with cheese, bacon crumbs, and bread crumbs. Bake uncovered, for 30 minutes, or until set in center.
