Spinach Quiche

Adapted from Best Recipes of the Great Food Companies

  • 1 cup onions, chopped
  • 10 ozs frozen spinach, thawed and drained
  • 4 ozs reduced fat Swiss cheese, shredded
  • 1/4 cup parmesan cheese, shredded
  • 1 tbsp unbleached flour
  • 8 ozs refrigerated pie crust
  • 1 1/2 cup fat-free milk
  • 3 whole eggs, slightly beaten
  • 3/4 tsp low-sodium worcestershire sauce
  • 1 tsp pizza seasoning
  • 1 tsp salt
  • 1/4 tsp black pepper
Spinach Quiche
Preheat oven to 375. In a large skillet, cook onions and spinach until onions are cooked. Stir in Swiss cheese, parmesan cheese, and flour. Mix well. Spread mixture into crust; set aside. In a mixing bowl, combine milk, eggs, Worcestershire sauce, pizza seasoning, salt, and black pepper. Mix well. Pour over spinach mixture in crust. Bake for 45 minutes, or until center is completely set.
