Spinach Muffins

Adapted from 100 Muffins

  • 1 cup onions, chopped and cooked
  • 2 cups unbleached flour
  • 1 tbsps baking powder
  • 1 tsp pizza seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 10 ozs frozen spinach, thawed and well drained
  • 1 cup low-fat buttermilk
  • 2 whole eggs
  • 1/4 cup olive oil
  • 2 ozs pine nuts, toasted
Spinach Muffins
Preheat oven to 400. Prepare 12 standard muffin pans with cooking spray; set aside. In a mixing bowl, combine onions, flour, baking powder, pizza seasoning, salt, and black pepper. Mix well. Add spinach, buttermilk, eggs, oil, and pine nuts. Mix until all is moistened. Spoon batter evenly into prepared pans. Bake for 25 minutes, or until a toothpick inserted in the center comes out clean.
