Southwest Chicken Pie

Adapted from Simple & Delicious

  • 2 ozs low-fat tortilla chips, coarsely crushed
  • 2 lbs ground chicken breast skinless
  • 1/2 cup bell peppers, chopped
  • 1/2 cup onions, chopped
  • 8 ozs no-salt-added tomato sauce
  • 1/2 cup water
  • 1 1/4 ozs taco seasoning mix
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 4 ozs Monterey Jack cheese, shredded
Southwest Chicken Pie
Preheat oven to 375. Prepare a 2-quart casserole dish with cooking spray; set aside. Place tortilla chips in prepared dish; set aside. In a large skillet, cook chicken, bell peppers, and onions until chicken is no longer pink. Add the tomato sauce, water, taco seasoning, salt, and black pepper. Bring to a boil; cook and stir for 15 minutes or until thickened. Spoon half of the chicken mixture over chips; sprinkle with half of the cheese. Repeat layers once. Bake, uncovered,for 30 minutes or until heated through.
